It may surprise those new to tea to learn that green tea and black tea come from the same exact plant species—Camellia sinensis.

This ultimately defines the different types of tea plants and how the tea leaves are processed to make green tea "green" and black tea "black".

For green tea, tea leaves are harvested from the Camellia sinensis plant, then quickly heated—pan-baking or steaming—and dried to prevent excessive oxidation that turns the green leaves brown and alters their fresh-picked flavor.

Brewed green tea is usually green, yellow, or light brown in color, and its flavor ranges from grassy and roasted (pan-roasted) to herbal, sweet, and sponge-like (stewed). When properly brewed, most green teas should be very light in color and mildly astringent.

Our process

Our green tea is sent through a steam treatment before rolling. A steamer applies mild heat to the leaves to help stop the oxidation process before the leaves are rolled into shape. Steam also helps bring out the leaf's fresh, grassy scent. Green tea leaves are not allowed to oxidize after rolling, which is why they remain pale and delicious.
